Homemade Crispy Chicken Strips

My new favorite way to make chicken strips

1 pound skinless, boneless chicken breasts
1 cup mashed potato flakes
1 cup seasoned bread crumbs
2 eggs
Garlic powder to taste
Paprika to taste
Salt to taste
Pepper to taste

Directions

Cut chicken into 1-in. strips. In a shallow bowl, combine the potato flakes, seasonings and bread crumbs. Dip chicken in egg, then in potato mixture. Fry in oil. I used a deep fryer but you could use a skillet. Make sure you drain the grease from them after cooking.

Maple Barbecue Chicken Sandwiches



4 boneless, skinless chicken breasts
1 cup ketchup
1/2 cup maple-flavored syrup
2 tablespoons yellow mustard
2 tablespoons Worcestershire sauce
2 teaspoons lemon juice
1/2-1 tsp chili powder
1/4 teaspoon garlic powder

Combine all ingredients except chicken in a bowl and set aside (I do it in a large glass measuring cup).

Place chicken breasts in crock pot and season with salt and pepper to taste. Pour sauce over the chicken. Cover and cook on low for 7-8 hours. ( mine usually only takes up to 4 hours)

When ready to serve, remove and shred chicken. Add shredded chicken back to pot with sauce and mix well. Serve on buns. ( I can usually just use 2 forks to pull meat apart while still in the pot

Homemade Chicken Pot Pie



Homemade Chicken Pot Pie
2 - 10 3/4oz cans cream of potato soup
1 – 16oz can mixed vegetables
2 cups cooked diced chicken
½ cup milk
½ tsp thyme
½ tsp black pepper
2 – 9”inch pie crusts (if frozen please thaw out)
1 egg, slightly beaten (optional)

Combine first 6 ingredients and then spoon into pie crusts. Cover with other crust and crimp edges to seal. Slit the top and brush with egg, if desired. Bake on 375 for 40 mins and cool 10 minutes.

Makes 6 Servings

Potato Soup - $1.19 x 2 = $2.38
Mixed vegs - $1.00
Chicken - $1.99 lb - $1.99
Milk - $3.29 gal – ½ cup = $.102
Pie crusts - $2.19
Egg – I never use
Spices – did not calculate the little bit used.

Total Cost per Serving - $1.277

*Notes – watch for sales on soups and vegs to make the cost per serving lower. I did purchase these on sale but not for as low as I normally would. Also instead of buying chicken just for this…When you cook a whole chicken, pick the meat off the bone and freeze it to use later in this recipe or freeze any leftover chicken to use in this at a later time. I used skinless boneless chicken breasts and cooked them in chicken broth all day in the crock pot.
