Homemade Chicken Pot Pie



Homemade Chicken Pot Pie
2 - 10 3/4oz cans cream of potato soup
1 – 16oz can mixed vegetables
2 cups cooked diced chicken
½ cup milk
½ tsp thyme
½ tsp black pepper
2 – 9”inch pie crusts (if frozen please thaw out)
1 egg, slightly beaten (optional)

Combine first 6 ingredients and then spoon into pie crusts. Cover with other crust and crimp edges to seal. Slit the top and brush with egg, if desired. Bake on 375 for 40 mins and cool 10 minutes.

Makes 6 Servings

Potato Soup - $1.19 x 2 = $2.38
Mixed vegs - $1.00
Chicken - $1.99 lb - $1.99
Milk - $3.29 gal – ½ cup = $.102
Pie crusts - $2.19
Egg – I never use
Spices – did not calculate the little bit used.

Total Cost per Serving - $1.277

*Notes – watch for sales on soups and vegs to make the cost per serving lower. I did purchase these on sale but not for as low as I normally would. Also instead of buying chicken just for this…When you cook a whole chicken, pick the meat off the bone and freeze it to use later in this recipe or freeze any leftover chicken to use in this at a later time. I used skinless boneless chicken breasts and cooked them in chicken broth all day in the crock pot.
